Sweet Potato Cake

The holiday season is here! This is often when people throw fitness out the window and gorge themselves, starting at Thanksgiving and continuing all the way through the end of the year! (I know, because I too have been guilty of this in years past).  New year’s resolutions are 10x easier if you get a head start and make healthy choices now;) We’ve put together some delicious holiday recipes that will help you reach your goals AND still enjoy the yummy foods we all look forward to this time of year! Enjoy!

  • 1 Large Sweet Potato
  • 1/2 Cup Coconut Oil
  • 1 Cup splenda
  • 2 Scoops Protein Powder (any flavor)
  • 2 Tbsp Sugar-Free Vanilla Syrup
  • 4 Egg Whites


Preheat oven to 350 degrees. Cook sweet potato in the microwave till it is soft. Let cool, then peel skin off sweet potato. Place peeled sweet potato in a mixing bowl. Add oil, splenda, protein powder, vanilla syrup, and egg whites. Mix all ingredients untill it is smooth and well mixed. (We suggest using an electircal hand mixer) Grease an 8×8 pan and pour potato mix into pan. Cook for 25-30 minutes.
